Asparagus is a great source of Vitamin C and other nutrients.
No low-carb diet should be so restrictive as to keep your body from getting the vitamins and minerals it needs to be healthy and fit.

| Asparagus with Hollandaise Sauce |
Ingredients
|
| 1 lb |
asparagus, fresh, washed |
| 2 |
egg yolks |
| 2 tbsp |
lemon juice |
| dash |
cayenne pepper |
| 1/2 cup |
butter, melted |
|
- Wash asparagus and cut off tough bottom edges.
- Heat 1 quart of water to boiling in medium saucepan.
- Add asparagus and cover.
- Reduce heat to simmer for 7 minutes.
- Using a blender, combine egg yolks, lemon juice and pepper.
- Turn blender to high and SLOWLY add butter.
- Blend until thick, about 30 seconds.
- Pour mixture into glass bowl and microwave on medium heat for 45 seconds.
- Drain asparagus and pour sauce over stalks.
- Serve while hot.
