Asparagus with Hollandaise Sauce
Ingredients

1 lb asparagus, fresh, washed
2 egg yolks
2 tbsp lemon juice
dash cayenne pepper
1/2 cup butter, melted
  • Wash asparagus and cut off tough bottom edges.
  • Heat 1 quart of water to boiling in medium saucepan.
  • Add asparagus and cover.
  • Reduce heat to simmer for 7 minutes.
  • Using a blender, combine egg yolks, lemon juice and pepper.
  • Turn blender to high and SLOWLY add butter.
  • Blend until thick, about 30 seconds.
  • Pour mixture into glass bowl and microwave on medium heat for 45 seconds.
  • Drain asparagus and pour sauce over stalks.
  • Serve while hot.
