You can easily substitute pork for the beef in this recipe.
You can also make this recipe very quickly using ground beef or leftover cooked beef. Just be sure to adjust cooking times.
While it's traditional to serve this over noodles or rice, you can serve this delicious stroganoff over a bed of crisp baby spinach, or straight up on the plate.

| Beef Stroganoff |
Ingredients
(4 servings - 27g protein - 10g carbohydrate per serving)

| 1 lb |
lean beef (1" cubes) |
| 2 tbsp |
olive oil |
| 1 |
onion (chopped) |
| 1/4 lb |
mushrooms (sliced) |
| 3 tbsp |
all-purpose flour |
| 1 tsp |
garlic powder |
| 1 tsp |
salt |
| 1/2 cup |
dry red wine |
| 1/4 tsp |
black pepper |
| 1 cup |
sour cream |
|
- In large skillet, heat oil over medium heat.
- Add beef cubes.
- Slowly brown meat on all sides.
- Add onion and mushrooms.
- Sprinkle with flour and garlic powder.
- Stir well.
- Add wine and pepper.
- Simmer over low heat for 40 minutes.
- Add sour cream.
- Heat slowly -- but do not bring to a boil.
- Stir well.
- Serve while hot.
