If you prefer to use fresh broccoli, either select florets or be sure to cut off the hardened end of the spears and blanch in hot water for 3 minutes before using in the recipe.

Chicken Divan
Ingredients
(4 servings - 34g protein - 10g carbohydrate per serving)

4 large boneless, skinless chicken breasts
3 tbsp flour
1/4 tsp white pepper
3 tbsp butter
1 cup milk
1/4 cup swiss cheese (shredded)
2 tbsp parmesan cheese (grated)
1 pkg (10 oz) frozen broccoli spears (thawed, drained)
  • Preheat oven to 400 degrees.
  • Wash chicken breasts and pat dry with paper towel.
  • In shallow baking dish, combine 2 tbsp flour and white pepper.
  • Dip chicken breasts in flour mixture to coat evenly.
  • In large skillet, melt 2 tbsp butter over medium heat.
  • Add chicken.
  • Cook for 2 minutes.
  • Turn.
  • Cook for 2 minutes.
  • Transfer chicken to ovenproof casserole for baking.
  • Melt remaining 1 tbsp butter in skillet.
  • Stir in 1 tbsp flour.
  • Cook 1 minute.
  • Add milk.
  • Stir and cook for 2 minutes or until thickened.
  • Remove from heat.
  • Stir in cheeses.
  • Place broccoli over chicken in baking dish.
  • Pour sauce over chicken and broccoli.
  • Sprinkle with extra parmesan cheese, if desired.
  • Bake 20 minutes.
  • Serve while hot.
