If you prefer to use fresh broccoli, either select florets or be sure to cut off the hardened end of the spears and blanch in hot water for 3 minutes before using in the recipe.

| Chicken Divan |
Ingredients
(4 servings - 34g protein - 10g carbohydrate per serving)

| 4 large |
boneless, skinless chicken breasts |
| 3 tbsp |
flour |
| 1/4 tsp |
white pepper |
| 3 tbsp |
butter |
| 1 cup |
milk |
| 1/4 cup |
swiss cheese (shredded) |
| 2 tbsp |
parmesan cheese (grated) |
| 1 pkg (10 oz) |
frozen broccoli spears (thawed, drained) |

- Preheat oven to 400 degrees.
- Wash chicken breasts and pat dry with paper towel.
- In shallow baking dish, combine 2 tbsp flour and white pepper.
- Dip chicken breasts in flour mixture to coat evenly.
- In large skillet, melt 2 tbsp butter over medium heat.
- Add chicken.
- Cook for 2 minutes.
- Turn.
- Cook for 2 minutes.
- Transfer chicken to ovenproof casserole for baking.
- Melt remaining 1 tbsp butter in skillet.
- Stir in 1 tbsp flour.
- Cook 1 minute.
- Add milk.
- Stir and cook for 2 minutes or until thickened.
- Remove from heat.
- Stir in cheeses.
- Place broccoli over chicken in baking dish.
- Pour sauce over chicken and broccoli.
- Sprinkle with extra parmesan cheese, if desired.
- Bake 20 minutes.
- Serve while hot.
