If your diet allows, you can serve this over egg noodles, rice, or pasta.
But, if you are sticking to a very low carb plan, this dish is fabulous on its own.
Leftovers can be served over a bed of crisp baby spinach or romaine lettuce - hot or cold.

| Chicken Fricassee |
Ingredients
(4 servings - 54g protein - 8g carbohydrate per serving)
|
| 4 lbs |
whole chicken, quartered |
| 1/4 cup |
flour |
| 1/2 tsp |
garlic salt |
| 1/2 tsp |
black pepper |
| 2 tbsp |
butter |
| 1 cup |
fat free chicken broth |
| 1 tsp |
black pepper |
| 1/2 cup |
half and half |
| 1 tbsp |
lemon juice |
| 1/4 cup |
green onions (chopped) |

- Wash chicken and pat dry with paper towel.
- In shallow baking dish, combine flour, garlic salt, and 1/2 tsp pepper.
- Dip chicken in flour mixture to coat evenly.
- In large skillet, melt butter over medium-high heat.
- Add chicken.
- Cook for 5 minutes.
- Turn.
- Cook for 5 minutes.
- Add broth.
- Cover.
- Simmer for 25 minutes.
- Transfer chicken to serving platter and place in warm oven.
- Add 1 tsp pepper to liquid in skillet.
- Cook over medium-high heat until liquid is reduced to about 1 cup.
- Add half and half.
- Stir and cook for 1 minute.
- Remove from heat.
- Add lemon juice.
- Pour over chicken on platter.
- Garnish with green onions.
- Serve while hot.
