Chicken Fricassee
Ingredients
(4 servings - 54g protein - 8g carbohydrate per serving)

4 lbs whole chicken, quartered
1/4 cup flour
1/2 tsp garlic salt
1/2 tsp black pepper
2 tbsp butter
1 cup fat free chicken broth
1 tsp black pepper
1/2 cup half and half
1 tbsp lemon juice
1/4 cup green onions (chopped)
  • Wash chicken and pat dry with paper towel.
  • In shallow baking dish, combine flour, garlic salt, and 1/2 tsp pepper.
  • Dip chicken in flour mixture to coat evenly.
  • In large skillet, melt butter over medium-high heat.
  • Add chicken.
  • Cook for 5 minutes.
  • Turn.
  • Cook for 5 minutes.
  • Add broth.
  • Cover.
  • Simmer for 25 minutes.
  • Transfer chicken to serving platter and place in warm oven.
  • Add 1 tsp pepper to liquid in skillet.
  • Cook over medium-high heat until liquid is reduced to about 1 cup.
  • Add half and half.
  • Stir and cook for 1 minute.
  • Remove from heat.
  • Add lemon juice.
  • Pour over chicken on platter.
  • Garnish with green onions.
  • Serve while hot.
