Cocktail Meatballs
Ingredients
(4 servings - 21 g protein and 1 g carb per serving)

2 tbsp soy sauce
1/4 cup water
1/2 clove garlic, minced
1/2 tsp ginger
1 pound lean ground beef
1/4 tsp black pepper
  • Preheat oven to 450 degrees.
  • In large mixing bowl, combine soy sauce, water, garlic, ginger, and pepper.
  • Add ground beef.
  • Mix lightly, but thoroughly.
  • Form into 1" diameter meatballs.
  • Spray baking sheet with non-stick cooking spray.
  • Arrange meatballs on baking sheet.
  • Place in oven for 15 minutes.
  • Serve while hot in small bowls with toothpicks or serve already skewered on cocktail picks (frilled toothpicks) on a serving tray.
