Cold Cucumber Chicken Soup
Ingredients
(4 servings - 19 g protein and 8 g carb per serving)

10-1/2 oz condensed cream of chicken soup
1/3 cup low-fat sour cream
3/4 cup V-8 vegetable juice
3/4 cup cold water
1/3 cup cucumber, peeled, seeded, finely chopped
1/4 tsp dried rosemary
1-1/2 cup cooked chicken breast, finely diced
  • Blend soup and sour cream until smooth.
  • Add juice and blend until smooth.
  • Add water and blend well.
  • Add cucumber, rosemary, and chicken.
  • Stir until well-blended.
  • Cover.
  • Chill for at least 3 hours.
  • Serve in chilled bowls.
