If you prefer, use yellow pepper in place of the red or green. Substitute white corn for the standard yellow corn. Replace the minced yellow onion with minced red onion for a slight flavor change.
You can also use baby Swiss in place of the Monterey Jack in this recipe. Baby Swiss has a light, nutty flavor and is much milder than regular Swiss.

| Crustless Easy Quiche |
Ingredients
(5 servings - 12g protein - 10g carbohydrate per serving)

butter or margerine |
| 1/2 cup |
onion (minced) |
| 1 cup |
whole kernel corn |
| 1/2 cup |
cooked ham (diced) |
| 3 tbsp |
green bell pepper (diced) |
| 3 tbsp |
red bell pepper (diced) |
| 2 |
green onions (white part only, diced) |
| 3 |
eggs |
| 1-1/2 cups |
whipping cream (scalded) |
| 1/2 cup |
Monterey Jack cheese (shredded) |

- Preheat oven to 300 degrees.
- In medium saucepan, heat butter.
- Add onion.
- Saute until tender.
- Stir in ham, corn, green pepper, red pepper, and onions.
- Saute until liquid has evaporated.
- Spray a 10" glass baking dish (round) with non-stick cooking spray.
- Pour saute mixture into baking dish.
- In mixing bowl, beat eggs lightly.
- Add 1/2 of scalded, hot cream.
- Beat well.
- Pour mixture into pan with scalded cream.
- Stir in cheese until well-blended.
- Pour over saute mixture in baking dish.
- Set baking dish into larger oven-safe pan.
- Add 1 cup boiling water to outer pan being careful not to get water into baking dish.
- Bake for 45 minutes or until knife inserted in center comes out clean.
- Remove from oven and let set for 5 minutes.
- Garnish with fresh bell pepper slices and tomato wedges, if desired.
