If you prefer, use sweet pickle relilsh instead of standard dill pickle relish. There are also about 100 other relishes to give a try - so be adventerous and try them all (just not all at once!).

| Fried Trout with Tartar Sauce |
Ingredients
(6 servings - 15 g protein - 7 g carbohydrate per serving)

| 1/2 cup |
olive oil |
| 1/2 cup |
instant pancake mix |
| 1 tsp |
grated lemon rind |
| 3/4 tsp |
onion powder |
| 1/2 tsp |
black pepper |
| 6 - 6oz each |
trout filets |
| 1 cup |
low fat mayonnaise |
| 1/8 cup |
pickle relish |
| 1/4 tsp |
mild prepared horseradish |

- In large skillet, heat oil until bubbling slightly.
- In casserole dish, combine pancake mix, lemon rind, onion powder, and black pepper.
- Place filets into pancake mix and turn to coat evenly.
- Fry coated filets in oil 3-4 minutes per side.
- When fish flakes easily with a fork, remove to serving platter.
- In small mixing bowl, combine mayonnaise, relish, and horseradish.
- Mix thoroughly.
- Serve with fish.
- Add lemon wedges for garnish, if desired.
