If you prefer, use tuna steaks in place of the salmon. Be sure the tuna is fresh-smelling, and thickly cut.
When using dried dill, place the spice into the palm of your hand and gently grind it with your fingers to release the oils and improve its flavor in your recipe.

| Grilled Salmon with Dill |
Ingredients
|
| 1 large (2 lb) |
salmon fillet |
| 1 tbsp |
vegetable oil |
| 1/4 tsp |
black pepper |
| 1/2 cup |
mayonnaise |
| 3 tsp |
dill (dried or fresh) |
| 1 tbsp |
milk |
|
- In small bowl, blend dill into mayonnaise. Set aside.
- Heat coal or gas grill to medium heat.
- Place fish on large sheet of heavy-duty aluminum foil.
- Brush salmon with oil and sprinkle with pepper.
- Close foil securely and crimp edges.
- Grill fish 4-6 inches from medium heat for 20-30 minutes.
- To serve, blend dill mayonnaise with milk and spoon over salmon servings. Add a spring of fresh dill, if you like.
