If you can't find fresh tuna steaks, buy frozen. To thaw, put into an airtight bag and thaw in the refrigerator for 2-3 days.
If time is an issue, you can unpackage the frozen tuna steaks and place into a colander. Submerge the colander in COLD water and gently separate steaks with a fork or spatula as the steaks thaw.
If you prefer, substitute lemon juice and lemon wedges for the lime in this recipe.

| Grilled Lime Tuna Steaks |
Ingredients
|
| 1 1/2 lbs |
tuna steaks (approximately 1" thick) |
| 1/4 cup |
lime juice |
| 2 tbsp |
olive oil |
| 1/4 tsp |
salt |
| 1/4 tsp |
cayenne pepper |
| 1 clove |
garlic, crushed |
| 1 medium |
lime, cut into wedges (for garnish) |

- Mix lime juice, olive oil, salt, pepper, and garlic in shallow glass baking dish.
- Add fish to marinade being sure to cover completely.
- Cover dish and place in refrigerator for at least 1 hour but no more than 24 hours.
- After marinading for at least one hour, remove fish from marinade. Discard marinade.
- Heat gas or coal grill to medium heat.
- Place fish on grill 4-6 inches from heat.
- Cook for 15-20 minutes, turning once.
- Serve fish with lime wedges.
