Turkey roast is an elegant entertaining dish or ideal for weekend dinners with the family.
If you don't have a food processor, you can blend spices in a glass bowl and gently press them against the sides with the backside of a spoon.

Herbed Turkey Roast
Ingredients
(8 servings - 40g protein - 2g carbohydrate per serving)

1 (4 lb) boneless turkey roast (thaw as directed)
10 cloves garlic
3 tbsp rosemary
1 tsp paprika
1 tbsp black pepper
1 tsp salt
2 tbsp olive oil
1 tsp cayenne pepper
  • Preheat oven to 350 degrees.
  • Remove mesh from turkey roast and lay roast out on cutting board with skin side down.
  • Combine rosemary, garlic, pepper, salt, and cayenne in blender or food processor.
  • Add oil and process until the mixture is coarsely ground.
  • Spread half of the spice mixture over the inside of the turkey and reroll turkey.
  • Tie turkey firmly with string every two inches to recreate the log shape.
  • Place turkey roast into roasting pan.
  • Spread remaining spice mixture over the turkey roast.
  • Place on center rack in oven and roast for 2 hours or until a meat thermometer inserted into the center registers 170 degrees.
  • Remove from oven and let stand for 20 minutes.
  • Cut and remove strings.
  • Cut roast into thin slices to serve.
  • Garnish with fresh rosemary sprigs, if desired.
