If you've never tried curry, don't worry that it will be too hot.
Curry powder is a blend of up to 40 spices. It can be hot, but also sweet. It adds a mild heat to dishes, a rich spiced flavor, and, depending upon the type, a sweetness.
Try different curry powders to find the one(s) that work for you.
Many supermarkets now sell spices in small quantities ideal for single recipes or experimenting. So, give it a go!

| Indonesian Chicken Breasts |
Ingredients

| 1/2 cup |
orange juice concentrate |
| 1/4 cup |
peanut butter (smooth type) |
| 2 tsps |
curry powder |
| 4 |
boneless, skinless chicken breast halves |
| 1/2 medium |
red bell pepper cut into wide strips |
| 1/2 medium |
green bell pepper cut into wide strips |
| 1/4 cup |
shredded, unsweetened coconut |

- Blend orange juice, peanut butter, and curry powder in mixing bowl.
- Add chicken to marinade being sure to cover chicken entirely.
- Cover and refrigerate mixture for at least an hour or up to 24 hours.
- After marinading for at least one hour, remove chicken and discard marinade.
- Grill chicken and bell peppers over charcoal or on a gas grill using medium heat.
- Cook for 15-20 minutes or until chicken juices run clear when breasts are pierced with a fork.
- Serve chicken with grilled pepper strips sprinkled with coconut.
