Lemon Broiled Chicken
Ingredients
(4 servings - 41 g protein and 8.5 g carb per serving)

2 pounds frying chicken, cut up
2 whole lemons
1/4 cup margarine
2 tsp salt
1/4 tsp pepper
1 tsp paprika
  • Cut lemons in half.
  • Remove skin from chicken parts.
  • Rub lemons over chicken, squeezing to release juice.
  • Cover and refrigerate for 3-4 hours.
  • Preheat broiler or grill.
  • Brush with melted margarine.
  • Sprinkle with salt, pepper, and paprika.
  • Broil or grill 5-7 inches from heat for 25 minutes.
  • Brush occasionally with melted margarine.
  • Turn chicken.
  • Broil or grill for 20 minutes longer.
  • Remove from heat.
  • Serve while hot.
  • Garnish with fresh lemon wedges, if desired.
