You can use lemon or orange juice in place of the lime juice in this recipe.
You can also substitute turkey breast for chicken breast. Try using cranberry juice with that!

| Lime Butter Chicken |
Ingredients
(6 servings - 63 g protein and 3 g carb per serving)
|

boneless, skinless chicken breast halves |
| 3 tbsp |
olive oil |
| 1 |
lime (juiced) (save peel for garnish!) |
| 1/4 cup + 2 tbsp |
unsalted butter |
| 1 tbsp |
chives (minced) |
| 1/2 tsp |
dried dill |
|
- Heat oil in heavy non-stick skillet over medium-high heat.
- Add chicken breasts.
- Saute until lightly browned (approximately 4 minutes).
- Turn chicken.
- Cover pan.
- Reduce heat to low.
- Cook 10 minutes or until chicken is tender and done.
- Remove to serving plates.
- Discard oil and wipe pan clean.
- Add lime juice and cook until bubbly.
- Add butter, stirring until opaque and thickened.
- Add chives.
- Add dill.
- Blend well.
- Drizzle over chicken.
- Garnish with lime peel.
- Serve while hot.
