Meat Loaf Italiano
Ingredients
(4 servings - 31g protein - 4g carbohydrate per serving)

1 lb lean ground beef
2 tbsp minced onion
1 clove garlic (minced)
1 tbsp parsley (minced)
1/2 tsp pepper
1/2 tsp oregano (dried)
1/2 cup chopped Italian salami
1 cup Monterey Jack cheese (shredded)
2 tbsp tomato catsup
1/4 cup Parmesan cheese (grated)
  • Preheat oven to 350 degrees.
  • In large mixing bowl, combine beef, onion, garlic, parsley, pepper, and oregano.
  • Blend well by hand.
  • Turn meat out onto cutting board covered with wax paper or aluminum foil.
  • Form into an 8" x 10" rectangle.
  • Sprinkle with salami and cheese.
  • Roll up from long side, jellyroll fashion, using the foil or wax paper to help roll the meat.
  • Seal bottoms and ends by crimping meat with fingers.
  • Place into an oven-proof casserole or baking dish sprayed with non-stick cooking spray.
  • Spread top and sides of loaf with catsup.
  • Bake for 30 minutes in center of oven.
  • Remove from oven and sprinkle with Parmesan cheese.
  • Return to oven for 10 minutes.
  • Remove from oven and let stand 5 minutes before slicing.
  • Serve while hot.
