You can easily substitute ground pork for the beef or blend in a 1/2 pound sweet or hot Italian sausage for extra flavor and texture.
Change the cheeses anytime to make this recipe new and exciting. Try romano instead of parmesan, cheddar in place of the jack, or use a blended cheese for even more change!

| Meat Loaf Italiano |
Ingredients
(4 servings - 31g protein - 4g carbohydrate per serving)

| 1 lb |
lean ground beef |
| 2 tbsp |
minced onion |
| 1 clove |
garlic (minced) |
| 1 tbsp |
parsley (minced) |
| 1/2 tsp |
pepper |
| 1/2 tsp |
oregano (dried) |
| 1/2 cup |
chopped Italian salami |
| 1 cup |
Monterey Jack cheese (shredded) |
| 2 tbsp |
tomato catsup |
| 1/4 cup |
Parmesan cheese (grated) |

- Preheat oven to 350 degrees.
- In large mixing bowl, combine beef, onion, garlic, parsley, pepper, and oregano.
- Blend well by hand.
- Turn meat out onto cutting board covered with wax paper or aluminum foil.
- Form into an 8" x 10" rectangle.
- Sprinkle with salami and cheese.
- Roll up from long side, jellyroll fashion, using the foil or wax paper to help roll the meat.
- Seal bottoms and ends by crimping meat with fingers.
- Place into an oven-proof casserole or baking dish sprayed with non-stick cooking spray.
- Spread top and sides of loaf with catsup.
- Bake for 30 minutes in center of oven.
- Remove from oven and sprinkle with Parmesan cheese.
- Return to oven for 10 minutes.
- Remove from oven and let stand 5 minutes before slicing.
- Serve while hot.
