Red Snapper a L'Orange
Ingredients
(6 servings - 23 g protein and 1 g carb per serving)

1-1/2 pound red snapper fillets
1/2 tsp fresh ground black pepper
2 tbsp orange juice
1 tsp orange rind
3 tbsp olive oil
1/2 tsp nutmeg
1 large orange (thinly sliced)
  • Preheat oven to 350 degrees.
  • In small mixing bowl, combine pepper, juice, rind, and oil.
  • Blend well.
  • Spray baking dish with non-stick cooking spray.
  • Arrange fillets in baking dish.
  • Drizzle sauce over fish.
  • Sprinkle with nutmeg.
  • Place on center rack of oven.
  • Bake for 20-30 minutes or until fish flakes easily with fork.
  • Remove to serving plates.
  • Garnish with fresh orange slices.
  • Serve while hot.
