If you prefer, use flounder or perch and replace the orange juice and rind with lemon juice and rind. Swap dill for nutmeg and you've got two recipes for the price of one!

| Red Snapper a L'Orange |
Ingredients
(6 servings - 23 g protein and 1 g carb per serving)
|
| 1-1/2 pound |
red snapper fillets |
| 1/2 tsp |
fresh ground black pepper |
| 2 tbsp |
orange juice |
| 1 tsp |
orange rind |
| 3 tbsp |
olive oil |
| 1/2 tsp |
nutmeg |
| 1 large |
orange (thinly sliced) |

- Preheat oven to 350 degrees.
- In small mixing bowl, combine pepper, juice, rind, and oil.
- Blend well.
- Spray baking dish with non-stick cooking spray.
- Arrange fillets in baking dish.
- Drizzle sauce over fish.
- Sprinkle with nutmeg.
- Place on center rack of oven.
- Bake for 20-30 minutes or until fish flakes easily with fork.
- Remove to serving plates.
- Garnish with fresh orange slices.
- Serve while hot.
