Sea Scallop Stir Fry
Ingredients
(4 servings - 12g protein 10 grams carbohydrate per serving)

1 pkg (3 oz) oriental flavor ramen noodles
1 tbsp olive oil
3/4 lb asparagus (cut into 1-inch pieces)
1 red bell pepper (cut into strips)
1 onion (finely chopped)
2 cloves garlic (finely chopped)
3/4 lb sea scallops (cut in half)
1 tbsp soy sauce
2 tbsp lemon juice
2 tsp red pepper oil (or use 1-1/2 tsp vegetable oil and 1/2 tsp cayenne pepper sauce instead)
  • Reserve seasoning packet from noodles.
  • Cook and drain noodles according to package directions.
  • In large skillet or wok, heat olive oil over high heat.
  • Add asparagus, bell pepper, onion, and garlic.
  • Stir fry 3 minutes.
  • Add scallops.
  • Stir fry until white (about 2 minutes).
  • In small bowl, mix seasoning packet, soy sauce, lemon juice, and pepper oil.
  • Add to scallop mixture.
  • Stir in noodles.
  • Stir fry for 1 minute.
  • Serve while hot.
