Spicy Beef and Leeks
Ingredients
(4 servings - 25g protein and 10g carbohydrate per serving)

1 tbsp chili oil
1 pound boneless beef sirloin or london broil
2 cups leeks (thinly sliced)
1 pkg (16oz) stir fry vegetables with broccoli and red pepper
1 tbsp chili puree with garlic
  • Prepare leeks by removing green tops to within 2 inches of white part.
  • Peel outside layer of bulbs.
  • Wash leeks in cold water until all dirt is removed.
  • Slice thinly.
  • Prepare beef by slicing into 1/4 inch strips.
  • Heat wok or heavy skillet over high heat.
  • Add oil.
  • Rotate pan to coat bottom and sides.
  • Add beef and leeks.
  • Stir fry 2 minutes.
  • Add vegetable mix.
  • Stir fry 4 minutes.
  • Stir in chili puree.
  • Cook and stir for 30 seconds.
  • Remove to serving dishes.
  • Serve while hot.
