Thai Pork Salad
Ingredients
(4 servings - 19 g protein and 10 g carb per serving)

1/2 lb lean pork strips (cooked, cut into cubes, chilled)
8 cups mixed salad greens including Chinese cabbage (torn into bite-size pieces)
1 medium avocado (halved, seeded, peeled, cubed)
1 large carrot (julienned)
1/4 cup green onions (sliced)
1/4 cup peanuts or honey-roasted peanuts
1/2 cup fat free Italian dressing
1 tbsp soy sauce
1-1/2 tsp fresh ginger (grated)
1/2 tsp crushed red pepper flakes
  • Distribute salad greens on four dinner plates.
  • Arrange pork cubes, avocado cubes, and carrots.
  • In small mixing bowl, combine Italian dressing, soy sauce, ginger, and red pepper.
  • Blend well.
  • Drizzle dressing over prepared salads.
  • Top each salad with green onions and peanuts.
  • Serve cold.
