Substitute lean beef strips for the pork and change cashews for the peanuts, and you've got another recipe from this one.

| Thai Pork Salad |
Ingredients
(4 servings - 19 g protein and 10 g carb per serving)
|
| 1/2 lb |
lean pork strips (cooked, cut into cubes, chilled) |
| 8 cups |
mixed salad greens including Chinese cabbage (torn into bite-size pieces) |
| 1 medium |
avocado (halved, seeded, peeled, cubed) |
| 1 large |
carrot (julienned) |
| 1/4 cup |
green onions (sliced) |
| 1/4 cup |
peanuts or honey-roasted peanuts |
| 1/2 cup |
fat free Italian dressing |
| 1 tbsp |
soy sauce |
| 1-1/2 tsp |
fresh ginger (grated) |
| 1/2 tsp |
crushed red pepper flakes |

- Distribute salad greens on four dinner plates.
- Arrange pork cubes, avocado cubes, and carrots.
- In small mixing bowl, combine Italian dressing, soy sauce, ginger, and red pepper.
- Blend well.
- Drizzle dressing over prepared salads.
- Top each salad with green onions and peanuts.
- Serve cold.
