| Sicilian Lamb Chops |
Ingredients

loin lamb chops |
| 2 tbsp |
olive oil |
| 1 clove |
garlic (crushed) |
| 1/4 tsp |
oregano (dried, crushed) |
| 1 tsp |
olive oil |
| 1 clove |
garlic (finely minced) |
| 1 tbsp |
onion (finely minced) |
| 1/2 lb |
plum tomatoes (diced) |
| 1 tbsp |
fresh basil (chopped) |
| 1 tbsp |
parsley (chopped) |
| 1/4 tsp |
pepper |

- Pat lamb chops dry with paper towels.
- In casserole or glass baking dish, combine 2 tbsp olive oil, crushed garlic, oregano, and pepper.
- Add chops and turn to coat.
- Cover dish.
- Refrigerate for 4 hours.
- Preheat oven to broil (550 degrees).
- Remove chops from dish and place on broiler pan.
- Broil for 3 minutes.
- Turn chops over.
- Broil for 4 minutes.
- In skillet, heat 1 tsp olive oil.
- Add minced garlic and onion.
- Saute garlic and onion for 3 minutes.
- Stir in tomatoes, basil, and parsley.
- Cook 5 minutes, stirring constantly.
- Place lamb chops on serving platter.
- Pour tomato mixture over chops.
- Serve while hot.
