| If you can't find hoisin sauce, you can make a substitute by blending equal parts ketchup and molasses.
You can try the Asian food section in most supermarkets or visit an Asian market if one is nearby. Genuine hoisin sauce is unique in flavor and really makes a difference. |

| Apricot Pork Stir Fry |
Ingredients

| 1 lb |
pork tenderloin |
| 1 tbsp |
vegetable oil |
| 1 |
jalepeno pepper (finely chopped) |
| 1 pkg (16 oz) |
frozen stir fry vegetables |
| 3 tbsp |
apricot preserves |
| 1 tbsp |
hoisin sauce |
|
- Trim fat from pork.
- Cut pork into 1/2-inch slices.
- Heat wok or large skillet over high heat.
- Add oil and turn pan to coat bottom and sides.
- Add pork and jalapenos.
- Stir fry for 5 minutes.
- Add vegetables.
- Stir fry for 2 minutes.
- Stir in preserves and hoisin sauce.
- Stir fry for 1 minute.
- Serve while hot.
