Cucumber is light and tasty adding a unique crunch and light flavor to this salad
Golden raisins are different from the dark raisins you're probably used to. They are lighter, sweeter, more tender, and not as seedy. You can find them alongside the regular raisins in most supermarkets. If you can't find them there, try a health food store like Wild Oats.
Low calorie and delicious
Athena Lamb Salad
Ingredients
(4 servings - 245 calories per serving)
1/2 tsp dried rosemary
1 clove garlic (minced)
1/2 pound boneless lamb chops cut 1/2-inch thick
8 cups baby spinach
1 15-oz can garbanzo beans (drained, rinsed)
1/4 cup cucumber (chopped, seeded)
1/2 cup plain, low-fat yogurt
1/4 cup green onions (chopped)
1/8 tsp black pepper
1 clove garlic (minced)
1/4 cup golden raisins
  • In small bowl, combine garlic and rosemary.
  • Rub onto lamb chops.
  • Place chops on unheated broiler pan.
  • Broil 5 inches from heat for 15 minutes, turning once.
  • Remove to cutting board to cool slightly.
  • Cut chops into thin bite-size slices.
  • In large salad bowl, combine spinach, beans, and cucumber.
  • Divide onto four plates.
  • Arrange lamb chops atop salad mixture on plates.
  • In small bowl, combine yogurt, green onions, pepper, and garlic.
  • Blend well.
  • Drizzle over salads.
  • Sprinkle raisins over salads.
  • Serve immediately, or chill and serve cold.
