To kick this dish up a little, add some chopped jalapenos on top of the cheese, or sprinkle with crushed red pepper.
You can use almost any BBQ sauce, but check the food label, you'd be surprised at how much fat or how many calories some have. Choose lower calorie, lower sugar types.

| BBQ Chicken and Cheddar Foil Packets |
Ingredients
(4 servings - 290 calories per serving)
|
| 3 tbsp |
barbecue sauce |
| 4 small |
boneless, skinless chicken breast halves |
| 2 small |
unpeeled red potatoes, thinly sliced |
| 1 small |
red or green bell pepper, seeded and sliced |
| 1 |
green onion, finely chopped |
| 1/4 tsp |
salt |
| 1/8 tsp |
freshly ground black pepper |
| 1-1/2 cups |
shredded reduced-fat cheddar cheese |

- Preheat oven to 375 degrees.
- Lay out four squares of aluminium foil (about 12"x12" each) on counter.
- Spoon about 1 teaspoon of BBQ sauce onto each square.
- Place one chicken breast onto sauce on each square.
- Spread another teaspoon of BBQ sauce over each chicken breast.
- Top each chicken breast with 1/4 of the potato, bell pepper, and onion.
- Sprinkle each with salt and pepper.
- Fold foil in half to cover contents.
- Make narrow folds at the edges to seal packets.
- Place packets on cookie sheet and bake for 35 minutes.
- Carefully open foil packets with scissors and pull back edges - BE CAREFUL OF ESCAPING STEAM.
- Sprinkle a quarter of the cheese into each packet.
- Leave packets unsealed and return to oven for 2 minutes or until cheese melts.
- Serve in packets or spoon each packet out onto serving dishes.
