Cheddar bran muffins are a great way to get your fiber for just 180 or so calories a piece!
Using baking cups (either paper or foil) allows these muffins to be used for school or other functions.

If you prefer, substitute medium cheddar cheese for the sharp cheddar if you prefer a more subtle flavor.

Low calorie and delicious

Ingredients
(12 servings - 181 calories per serving)
1-1/4 cup buttermilk or sour cream
1 cup whole bran
1/4 cup shortening (Crisco)
1/3 cup sugar
1 egg
1-1/2 cup flour (sifted)
1-1/2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
4 oz sharp cheddar cheese (shredded (1 cup))
  • Preheat oven to 400 degrees.
  • In medium mixing bowl, pour buttermilk over bran.
  • Let sit until bran is softened.
  • In large mixing bowl, cream shortening and sugar until light.
  • Beat in egg.
  • Sift together flour, baking powder, salt, and baking soda.
  • Add to creamed mixture, alternating with bran mixture.
  • Stir in cheese.
  • Fill greased muffin pans 2/3 full.
  • Bake for 30 minutes.
