You can substitute any shaped pasta for the penne; leftover white meat turkey for the chicken; pecans or cashews for the walnuts; and Romano for the parmesan cheese in this recipe.

| Chicken Berry Salad |
Ingredients
(4 servings - 285 calories per serving)
|
| 2 cups |
penne pasta (cooked, drained) |
| 3 cups |
fresh spinach or baby spinach (torn into pieces) |
| 1 cup |
cooked chicken (cut into strips) |
| 1 cup |
strawberries (sliced) |
| 1/2 cup |
red onion (thinly sliced) |
| 1/3 cup |
walnuts (coarsely chopped) |
| 1/4 cup |
Parmesan cheese |
| 1/2 cup |
balsamic vinaigrette salad dressing |
|
- Cook pasta according to package directions.
- Drain.
- Rinse under running water.
- Drain.
- In large mixing bowl, combine spinach and pasta.
- Add chicken, strawberries, onion, walnuts, and cheese.
- Toss lightly to mix.
- Drizzle with dressing.
- Toss lightly to coat.
- Serve immediately.
