Walnuts add flavor and texture to this recipe.
You can substitute any shaped pasta for the penne; leftover white meat turkey for the chicken; pecans or cashews for the walnuts; and Romano for the parmesan cheese in this recipe.

Chicken Berry Salad
Ingredients
(4 servings - 285 calories per serving)
2 cups penne pasta (cooked, drained)
3 cups fresh spinach or baby spinach (torn into pieces)
1 cup cooked chicken (cut into strips)
1 cup strawberries (sliced)
1/2 cup red onion (thinly sliced)
1/3 cup walnuts (coarsely chopped)
1/4 cup Parmesan cheese
1/2 cup balsamic vinaigrette salad dressing
  • Cook pasta according to package directions.
  • Drain.
  • Rinse under running water.
  • Drain.
  • In large mixing bowl, combine spinach and pasta.
  • Add chicken, strawberries, onion, walnuts, and cheese.
  • Toss lightly to mix.
  • Drizzle with dressing.
  • Toss lightly to coat.
  • Serve immediately.
