| Chicken Cacciatore |
Ingredients

| 4 (about 1/4 lb ea) |
boneless, skinless chicken breasts |
| 2 tbsp |
flour |
| 1/2 tsp |
pepper |
| 2 tbsp |
olive oil |
| 1 small |
onion (chopped) |
| 2 cloves |
garlic (minced) |
| 1 cup |
mushrooms (sliced) |
| 1/2 cup |
dry white wine |
| 1/2 cup |
fat free chicken broth |
| 3 tbsp |
tomato paste |
| 1/2 tsp |
thyme |
| 1/2 tsp |
marjoram |
| 1/2 tsp |
basil |

- Wash chicken and pat dry with paper towel.
- In shallow dish, combine flour and pepper.
- Coat chicken with flour mixture.
- In large skillet, heat oil over medium-high heat.
- Add chicken.
- Cook for 2 minutes.
- Turn.
- Add onion and garlic.
- Reduce heat to medium.
- Add remaining ingredients.
- Simmer, uncovered, for 15-20 minutes until sauce thickens.
- Serve while hot.
