Almonds create the subtle flavor and texture for these light Chinese cookies.
This recipe easily becomes three when you replace almonds with either macadamia nuts or crushed cashews!
Low calorie and delicious
Chinese Almond Cookies
Ingredients
(12 servings (3 cookies each) - 150 calories per serving)
1/2 cup butter
1/3 cup granulated sugar
1/3 cup honey
1-1/2 cups all-purpose flour
1/2 tsp baking soda
1 tbsp cinnamon
1/2 cup sliced almonds
  • Preheat oven to 350 degrees.
  • Spray cookie sheets with non-stick cooking spray.
  • In large mixing bowl, beat butter until light and creamy.
  • Add sugar.
  • Beat until fluffy.
  • Add honey.
  • Beat until well-blended.
  • In separate mixing bowl, combine flour, baking soda, and cinnamon.
  • Blend well.
  • Add to butter mixture.
  • Mix until smooth.
  • Shape dough into a log 2 inches in diameter.
  • Wrap in wax paper or plastic wrap.
  • Place in freezer for 30 minutes.
  • Remove plastic wrap or wax paper.
  • Slice into 1/4" rounds.
  • Place 1 inch apart on cookie sheets.
  • Press sliced almonds into tops of cookies.
  • Place on center rack of oven.
  • Bake for 13-15 minutes or until lightly browned.
  • Remove to rack to cool.
  • Store tightly covered.
