| Cold Cucumber Chicken Soup |
Ingredients

condensed cream of chicken soup |
| 1/3 cup |
low-fat sour cream |
| 3/4 cup |
V-8 vegetable juice |
| 3/4 cup |
cold water |
| 1/3 cup |
cucumber, peeled, seeded, finely chopped |
| 1/4 tsp |
dried rosemary |
| 1-1/2 cup |
cooked chicken breast, finely diced |

- Blend soup and sour cream until smooth.
- Add juice and blend until smooth.
- Add water and blend well.
- Add cucumber, rosemary, and chicken.
- Stir until well-blended.
- Cover.
- Chill for at least 3 hours.
- Serve in chilled bowls.
