If you hate throwing out stale French or Italian bread (and don't we all!), turn to this recipe for using it instead.
Before attempting to cut stale, crusty bread, soften slightly by cutting the loaf in half and placing in the microwave with a small cup of water, and microwave for 30 seconds to slightly steam the bread.

| French Toast |
Ingredients
(4 servings - 175 calories per serving)

| 1 large |
egg |
| 2 |
egg whites |
| 1/4 cup |
skim or light milk |
| 1/2 tsp |
vanilla extract |
| 1/2 tsp |
ground cinnamon |
| 1/4 tsp |
ground nutmeg (optional) |
| 8 slices (1" thick) |
French or Italian bread |

- In small mixing bowl, whisk egg and egg whites until foamy.
- Add milk, vanilla, cinnamon, and nutmeg.
- Whisk until thoroughly blended.
- Pour into shallow dish or high-rimmed plate.
- Spray large skillet with non-stick cooking spray.
- Heat skillet over medium-high heat.
- Dip four slices of bread into egg mixture.
- Turn each slice to coat evenly.
- Drain over dish before transferring to skillet.
- Cook each slice 1-2 minutes per side.
- Transfer cooked slices to serving platter.
- Repeat process for remaining four slices.
- Serve while hot.
- Sprinkle with cinnamon sugar or powdered sugar, if desired.
