Tomato soup is a terrific low-cal meal. Combine this with our French country bread and a salad and you've got a hearty meal.
Try using freshly chopped herbs instead of the usual dried herbs for a serious taste difference.

You can also replace half of the tomato juice with tomato-clam, V-8, or any other blended tomato juice.

Low calorie and delicious
Fresh Tomato Soup
Ingredients
(4 servings - 60 calories per serving)
4 cups tomato juice
1/2 bay leaf
2 whole cloves
1/4 tsp dill seed
1/4 tsp basil
1/4 tsp marjoram
1/4 tsp oregano
1/2 tsp sugar
1/2 tsp black pepper
  • The night before cooking, combine the herbs and tomato juice.
  • Seal container tightly.
  • Place in refrigerator overnight.
  • Empty contents into sauce pan.
  • Heat to boiling.
  • Remove from heat and strain.
  • Pour into serving bowls.
  • Garnish with parsley, if desired.
