Acorn squash is a great squash for baking as the rind is thick and holds it's shape well.
Try using smooth applesauce in place of the chunky, if you prefer.

You can sprinkle each finished squash with a little cinnamon-sugar for a little extra treat.

Low calorie and delicious
Glazed Squash
Ingredients
(6 servings - 250 calories per serving)
3 small acorn squash (cut in half)
1/2 tsp pepper
1/2 tsp cinnamon
1/4 cup butter
1-1/2 cups chunky applesauce
1/4 cup firmly packed brown sugar
  • Preheat oven to 400 degrees.
  • Lightly spray casserole or glass baking dish with non-stick cooking spray.
  • Arrange squash, cut side down in coated baking dish.
  • Fill pan 1/4-inch deep with hot water.
  • Bake for 35 minutes.
  • Invert squash.
  • Mash insides with fork.
  • Season with pepper, cinnamon, and butter.
  • Mix lightly with fork.
  • Top each with applesauce and brown sugar.
  • Return to oven.
  • Bake 15 minutes.
  • Serve while hot.
