Watch your slicing! This recipe makes 8 servings, not 6. At 300 calories per serving, you can even make it 10 slices and save a few calories per serving.

Grandma's Apple Coffee Cake
Ingredients
(8 servings - 300 calories per serving)
2/3 cup butter or margerine (at room temperature)
1/3 cup granulated sugar
1/2 cup sour cream
1 tsp vanilla extract
1 egg
1-1/3 cup all-purpose flour
2/3 tsp baking soda
1/8 tsp salt
1 cup chopped, fresh apple
1/3 cup raisins
1/4 cup all-purpose flour
1/4 cup brown sugar (firmly packed)
1/2 tsp cinnamon
2 tbsp butter or margerine (softened)
  • Preheat oven to 350 degrees.
  • In large mixing bowl, cream butter or margerine with 1/3 cup sugar until light and fluffy.
  • Beat in sour cream, vanilla, and egg.
  • In a separate bowl, combine 1-1/3 cup flour, baking soda, and salt.
  • Mix into the creamed mixture.
  • Blend well.
  • Grease an 8-inch round cake pan well being sure to grease sides. You can use a non-stick cooking spray if you prefer.
  • Spoon half of the batter into the pan.
  • Sprinkle with apple pieces and raisins.
  • In a small mixing bowl, combine 1/4-cup flour, brown sugar, cinnamon, and 2 tbsp butter.
  • Mix until crumbly.
  • Sprinkle half of crumbly mixture over apples and raisins in cake pan.
  • Spoon the remaining batter over everything in the cake pan.
  • Sprinkle the remaining crumbly mixture over the batter in the cake pan.
  • Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  • Cool for 15 minutes in pan.
  • Invert onto serving plate.
  • Slice into 8 wedges.
  • Garnish with fresh apple slices, if desired.
