Add any fresh vegetables you like from the produce section or nearest vegetable stand.
Use low-fat or no-fat beef broth in place of the regular broth to save calories.
To turn this into a hearty meal soup, just add pre-cooked beef, pork, or even chicken. When using chicken, swap chicken broth for the beef broth.

Ingredients

carrots, finely chopped |
| 1 head |
cabbage, shredded |
| 2 stalks |
celery, finely chopped |
| 1 whole |
white onion, chopped |
| 1 can (28oz) |
tomatoes with juice |
| 6 cups |
beef broth |
| 2 tsp |
black pepper |
|
- In large cooking pot, combine all ingredients and stir to blend.
- Cook over high heat until boiling.
- Reduce heat to low.
- Cover pot.
- Simmer 45 minutes.
- Serve while hot.
