For an old-fashioned meatloaf, add 1/4 cup finely chopped bell pepper (green, yellow, or red).
For extra flavor, add 1 tsp minced garlic.
Check your supermarket for the new low-sugar ketchup for a slight reduction in calories and carbs.
If you prefer, you can use half ground pork and half ground beef in this recipe.

| Homestyle Meatloaf |
Ingredients
(6 servings - 300 calories per serving)

| 1-1/2 lb |
lean ground beef |
| 1/2 cup |
tomato catsup |
| 1/3 cup |
tomato juice |
| 1/2 tsp |
salt |
| 1/2 tsp |
black pepper |
| 1/4 tsp |
cayenne pepper |

eggs (beaten) |
| 3/4 cup |
fresh bread crumbs |
| 1/4 cup |
onions (finely chopped) |
| 2 tsp |
prepared mustard |
| 1/4 cup |
tomato catsup |
| 1/2 tsp |
prepared mustard |
| 2 tsp |
brown sugar |

- Preheat oven to 400 degrees.
- Line a 9" x 5" loaf pan with aluminum foil (sides and bottom).
- In a large mixing bowl, combine beef, 1/2 cup catsup, tomato juice, salt, black pepper, cayenne pepper, eggs, bread crumbs, onions, and 2 tsp mustard.
- Blend by hand until thoroughly blended.
- Press meat mixture into lined pan.
- In a small mixing bowl, combine 1/4 cup catsup, 1/2 tsp mustard, and brown sugar.
- Mix well.
- Spread mixture over meatloaf.
- Bake for 45 minutes.
- Drain off fat.
- Let meatloaf sit for 5 minutes.
- Transfer meatloaf to serving platter and slice into 6 slices.
- Garnish with tomato wedges or fresh herbs, if desired.
