For an old-fashioned meatloaf, add 1/4 cup finely chopped bell pepper (green, yellow, or red).

For extra flavor, add 1 tsp minced garlic.

Check your supermarket for the new low-sugar ketchup for a slight reduction in calories and carbs.

If you prefer, you can use half ground pork and half ground beef in this recipe.

Homestyle Meatloaf
Ingredients
(6 servings - 300 calories per serving)
1-1/2 lb lean ground beef
1/2 cup tomato catsup
1/3 cup tomato juice
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper
2 eggs (beaten)
3/4 cup fresh bread crumbs
1/4 cup onions (finely chopped)
2 tsp prepared mustard
1/4 cup tomato catsup
1/2 tsp prepared mustard
2 tsp brown sugar
  • Preheat oven to 400 degrees.
  • Line a 9" x 5" loaf pan with aluminum foil (sides and bottom).
  • In a large mixing bowl, combine beef, 1/2 cup catsup, tomato juice, salt, black pepper, cayenne pepper, eggs, bread crumbs, onions, and 2 tsp mustard.
  • Blend by hand until thoroughly blended.
  • Press meat mixture into lined pan.
  • In a small mixing bowl, combine 1/4 cup catsup, 1/2 tsp mustard, and brown sugar.
  • Mix well.
  • Spread mixture over meatloaf.
  • Bake for 45 minutes.
  • Drain off fat.
  • Let meatloaf sit for 5 minutes.
  • Transfer meatloaf to serving platter and slice into 6 slices.
  • Garnish with tomato wedges or fresh herbs, if desired.
