Cantalope can be selected quickly by finding the smoothest rind which indicates the ripest, fullest melon. Be sure it smells fresh at the cut stem end. It should be firm without obvious bruising or moldy spots.
You can substitute imitation crabmeat, scallops, or even shrimp for the crabmeat in this recipe. Just be sure to get the precooked kinds!

Change this recipe any time by using raspberries in place of strawberries, honeydew in place of cantalope, or flavored yogurt instead of plain. How about lemon?!

Low calorie and delicious
Mediterranean Crab Salad
Ingredients
(4 servings - 200 calories per serving)
1 cup cantalope (cut into bite size pieces)
1 cup strawberries (washed, hulled, halved)
1 pkg (6 oz) crabmeat
3/4 cup celery (sliced)
1/4 cup light mayonnaise
1/4 cup plain low-fat yogurt
2 tbsp fat-free milk
1/2 tsp curry powder
4 cups torn mixed greens
  • In a large bowl, combine fruit, crabmeat, and celery.
  • Set aside.
  • In small mixing bowl, blend mayonnaise, yogurt, milk, and curry powder.
  • Divide salad greens between four serving plates.
  • Top each plate with crabmeat mixture.
  • Drizzle each salad with dressing.
  • Serve immediately.
