Mediterranean Vegetable Salad
Ingredients
(4 servings - 107 calories per serving)
2 whole tomatoes
2 large cucumbers
2 whole green bell peppers
1/2 yellow onion
2 tbsp olive oil
1 tsp black pepper
  • Wash, pat dry, and dice vegetables into 1/2-inch cubes or smaller.
  • In large salad bowl, toss together diced vegetables.
  • Add olive oil and pepper.
  • Toss lightly to coat.
  • Let stand at room temperature for 1/2 hour before serving.
