Save a few calories by replacing the regular salad dressing with one of the low-fat or reduced calorie versions.
Try Romano cheese in place of the parmesan for a subtle taste change.
If you like a little kick in your dishes, add 1/2 tsp crushed red pepper flakes.

Ingredients
(6 servings - 168 calories per serving)

eggplant |
| 1/2 cup |
Italian salad dressing |
| 1 tsp |
rosemary |
| 1/4 tsp |
oregano |
| 1 cup |
tomato sauce |
| 1/2 tsp |
black pepper |
| 2 oz |
grated parmesan cheese |
|
- Peel eggplant and cut crosswise into 3/4-inch slices.
- Place in large mixing bowl.
- Add salad dressing, rosemary, and oregano.
- Toss and turn eggplant lightly to coat.
- Let stand one hour at room temperature.
- Drain.
- Heat oven to broil.
- Lightly spray baking sheet with cooking spray.
- Arrange eggplant slices on baking sheet.
- Broil three inches from heat for 5 minutes.
- Turn slices carefully.
- Return to broiler for 5 minutes or until lightly browned.
- Remove eggplant slices and layer into baking dish or casserole.
- Cover with tomato sauce.
- Sprinkle with black pepper.
- Top with cheese.
- Return to broiler for 2 minutes or until cheese browns.
- Serve while hot.
