Oranges give this recipe it's zing and flavor.
You can substitute mandarin oranges for the orange pieces in this recipe, just drain them before using.

You can save some calories and fat by using a low-fat milk in place of whole milk.

Palm Beach Citrus Muffins
Ingredients
(8 servings - 250 calories per serving)
1 cup all-purpose flour
1/3 cup granulated sugar
1-1/2 tsp baking powder
1/3 cup Crisco or other shortening
3 tbsp butter or margerine (softened)
2 eggs
1/4 cup milk
1/4 cup orange juice
1/4 cup orange pieces (diced)
  • Preheat oven to 350 degrees.
  • In large mixing bowl, combine flour, sugar, and baking powder.
  • Add shortening and butter.
  • Cut in well and stir until well blended.
  • In medium mixing bowl, combine eggs, milk, and orange juice.
  • Blend well.
  • Stir wet ingredients into flour mixture, mixing only until dry ingredients are moistened.
  • Gently stir in orange pieces.
  • Spoon batter into 8 paper-lined muffin cups until 2/3 full.
  • Bake for 25 to 30 minutes or until centers spring back when lightly touched.
  • Serve warm or cold.
