You can substitute mandarin oranges for the orange pieces in this recipe, just drain them before using.
You can save some calories and fat by using a low-fat milk in place of whole milk.

| Palm Beach Citrus Muffins |
Ingredients
(8 servings - 250 calories per serving)
|
| 1 cup |
all-purpose flour |
| 1/3 cup |
granulated sugar |
| 1-1/2 tsp |
baking powder |
| 1/3 cup |
Crisco or other shortening |
| 3 tbsp |
butter or margerine (softened) |
| 2 |
eggs |
| 1/4 cup |
milk |
| 1/4 cup |
orange juice |
| 1/4 cup |
orange pieces (diced) |

- Preheat oven to 350 degrees.
- In large mixing bowl, combine flour, sugar, and baking powder.
- Add shortening and butter.
- Cut in well and stir until well blended.
- In medium mixing bowl, combine eggs, milk, and orange juice.
- Blend well.
- Stir wet ingredients into flour mixture, mixing only until dry ingredients are moistened.
- Gently stir in orange pieces.
- Spoon batter into 8 paper-lined muffin cups until 2/3 full.
- Bake for 25 to 30 minutes or until centers spring back when lightly touched.
- Serve warm or cold.
