Pork and Pepper Stir-Fry
Ingredients
4 servings - 20g protein - 9g carbohydrate per serving
200 calories per serving

1 lb pork loin or pork tenderloin
3 tbsp water
2 tsp cornstarch
1 tbsp soy sauce
2 tbsp peanut oil
1/2 cup celery (sliced diagonally)
1/2 cup green onions (sliced)
1/2 cup fresh mushrooms (sliced)
1/2 cup snowpeas (washed)
1/2 cup red pepper (sliced)
1/2 cup green pepper (sliced)
1 tsp salt
  • Cut meat into 1/4-inch strips.
  • Place meat in mixing bowl.
  • Combine water, cornstarch, and soy sauce.
  • Mix with meat until all pieces are coated.
  • Heat peanut oil in heavy skillet or wok being sure to coat the bottom and sides of pan.
  • Add meat strips.
  • Stir-fry for 5 minutes.
  • Add celery, onions, mushrooms, peas, and peppers.
  • Stir-try until vegetables are tender-crisp and brightly coloured.
  • Add salt.
  • Serve hot with rice, if desired.
