Marshmallows add the light texture and sweet ribbons through this fudge.  Watch those portion sizes!!
If you prefer, use creamy peanut butter instead of chunky.

You can use milk chocolate chips in lieu of semi-sweet.

Be careful of the portion sizes on this. This recipe makes 20 portions. You may only have ONE piece per serving.

Low calorie and delicious
Rocky Road Fudge
Ingredients
(20 servings - 250 calories per serving)
1 pkg (12 oz) semi-sweet chocolate chips
1 cup chunky peanut butter
1 cup dry roasted peanuts or mixed nuts
4 cups miniature marshmallows
  • Spray 9x9 inch square baking pan with non-stick cooking spray.
  • In heavy saucepan, combine chocolate chips and peanut butter.
  • Cook over low heat, stirring constantly, until chocolate melts completely.
  • Blend in nuts.
  • Mix in marshmallows.
  • Heat just until marshmallows begin to swell and melt.
  • Do not melt marshmallows completely.
  • Pour mixture into prepared baking pan.
  • Smooth top of mixture.
  • Place into refrigerator for 1-3 hours or until firm.
  • Cut into 20 squares or triangles.
