Santa Fe Sandwich Rollups
Ingredients
(6 servings - 300 calories per serving)
2 (12-inch) flour tortillas
1 can (8 oz) refried beans
1 cup cooked, chopped spinach
1 egg (hard-cooked, chopped)
1/4 cup Monterey Jack cheese (shredded)
1/4 cup cheddar cheese (shredded)
4 slices boiled ham luncheon meat
  • Spread half of the beans evenly on each tortilla to within 1 inch of the edges.
  • Squeeze spinach to wring out excess water.
  • Spread half evenly over each tortilla.
  • Spread cheeses and egg evenly over each tortilla.
  • Lay luncheon meat atop each tortilla.
  • Roll each tortilla up (jelly-roll style).
  • Wrap each in plastic wrap.
  • Refrigerate for 1 hour (or up to 8 hours).
  • After chilling, remove plastic wrap.
  • Cut each roll into equal pieces about 1-inch thick.
  • Arrange on serving platter, cut side up.
  • Garnish with fresh tomato wedges, if desired.
