If you'd rather, use pita pockets instead of tortillas and cut into wedges.

Ingredients
(6 servings - 300 calories per serving)

| 2 (12-inch) |
flour tortillas |
| 1 can (8 oz) |
refried beans |
| 1 cup |
cooked, chopped spinach |
| 1 |
egg (hard-cooked, chopped) |
| 1/4 cup |
Monterey Jack cheese (shredded) |
| 1/4 cup |
cheddar cheese (shredded) |
| 4 slices |
boiled ham luncheon meat |

- Spread half of the beans evenly on each tortilla to within 1 inch of the edges.
- Squeeze spinach to wring out excess water.
- Spread half evenly over each tortilla.
- Spread cheeses and egg evenly over each tortilla.
- Lay luncheon meat atop each tortilla.
- Roll each tortilla up (jelly-roll style).
- Wrap each in plastic wrap.
- Refrigerate for 1 hour (or up to 8 hours).
- After chilling, remove plastic wrap.
- Cut each roll into equal pieces about 1-inch thick.
- Arrange on serving platter, cut side up.
- Garnish with fresh tomato wedges, if desired.
