Shrimp Stir Fry
Ingredients
(4 servings - 190 calories per serving)
1 tbsp olive oil
1 lb uncooked medium shrimp (peeled, deveined)
1 can (15 oz) baby corn (drained)
1/4 cup roasted red bell peppers (coarsely chopped)
1/2 tsp tarragon leaves (dried)
1/2 tsp garlic salt
  • Heat oil in heavy skillet or wok over medium heat.
  • Add shrimp.
  • Raise heat to medium-high.
  • Stir fry 3 minutes until shrimp are pink.
  • Add corn, peppers, and spices.
  • Stir fry for 4 minutes.
  • Serve while hot.
  • Garnish with fresh lemon wedges, if desired.
