Spiced Chocolate Florentines
Ingredients
24 cookies (1 cookie per serving) - 125 calories per serving
3/4 cup whipping cream
4 tbsp butter or margerine
3/4 cup sugar
1-3/4 cup walnuts (finely chopped)
1/2 cup all-purpose flour
1/4 tsp nutmeg (grated)
1/4 tsp cloves (ground)
1/2 tsp cinnamon
4 oz semisweet chocolate bits or chips
  • Heat oven to 350 degrees.
  • In saucepan, combine cream, butter, and sugar.
  • Bring to a boil, stirring until sugar dissolves.
  • Remove from heat.
  • Stir in walnuts, flour, and spices.
  • Drop batter by heaping teaspoonsful onto a cookie sheet lightly sprayed with non-stick cooking spray.
  • Bake for 12 minutes or until edges are well-browned.
  • Cool cookies on tray for 1 minute.
  • Carefully remove to rack to finish cooling for 1 hour.
  • In small glass bowl, melt chocolate in microwave on medium heat for approximately 45 seconds or until fully melted.
  • Spread melted chocolate on the bottom of each cookie.
  • Place cookies, chocolate side up, on cooling rack until chocolate sets.
  • Cookies should be stored in an air-tight container.
