If you cannot find chili oil, you can make your own. Combine one tbsp olive or vegetable oil with one finely chopped jalapeno.
When handling raw peppers, be sure to wear gloves to avoid contact burns.

| Spicy Beef and Leeks |
Ingredients
4 servings - 25g protein and 10g carbohydrate per serving

| 1 tbsp |
chili oil |
| 1 pound |
boneless beef sirloin or london broil |
| 2 cups |
leeks (thinly sliced) |
| 1 pkg (16oz) |
stir fry vegetables with broccoli and red pepper |
| 1 tbsp |
chili puree with garlic |

- Prepare leeks by removing green tops to within 2 inches of white part.
- Peel outside layer of bulbs.
- Wash leeks in cold water until all dirt is removed.
- Slice thinly.
- Prepare beef by slicing into 1/4 inch strips.
- Heat wok or heavy skillet over high heat.
- Add oil.
- Rotate pan to coat bottom and sides.
- Add beef and leeks.
- Stir fry 2 minutes.
- Add vegetable mix.
- Stir fry 4 minutes.
- Stir in chili puree.
- Cook and stir for 30 seconds.
- Remove to serving dishes.
- Serve while hot.
