Ingredients

fresh mushrooms (sliced) |
| 3 tbsp |
olive oil |
| 1 tsp |
salt |
| 1/2 tsp |
fresh ground black pepper |
| 1/2 tsp |
crushed red pepper flakes |
| 1/2 tsp |
dried thyme |
| 1 clove |
garlic (minced) |
| 1 lb |
perch, haddock, or tilapia fillets |

- Preheat oven to 400 degrees.
- Spread mushrooms over shallow baking sheet.
- Drizzle with 2 tbsp olive oil.
- Sprinkle with 1/2 tsp salt, peppers, thyme, and garlic.
- Stir to distribute evenly.
- Bake for 10 minutes.
- Remove pan from oven.
- Stir mushrooms.
- Push them away from center of pan.
- Place fish in center of pan.
- Turn fillets over and drizzle with remaining olive oil.
- Sprinkle with remaining salt.
- Return pan to oven.
- Bake for 15 minutes or until fish is cooked through.
- Serve while hot.
