Use the celery leaf tops as garnish for this recipe.  Chopped finely, they add a slightly bitter zing to dressings and sauces, too.
You can make your own dressing by blending 1/3 cup low-fat ranch dressing with 1 tbsp honey and 1 tsp dijon mustard.  Blend well.

If you don't like white beans, skip them. This is still a delicious tuna salad recipe!

If you can afford the extra few calories, create wraps using small flour tortillas or pita pockets. Warm them before filling to make them extra flavorful.

Tuna With White Beans
Ingredients
(4 servings - 203 calories per serving)
1 - 15oz can white kidney beans (cannellini) (rinsed, drained)
1 cup celery (thinly sliced)
1/2 cup creamy honey dijon dressing
1/4 cup red onion (finely chopped)
1 - 6.5 oz can chunk white tuna in water (drained)
1 head Boston lettuce (separated into leaves)
2 medium red sweet peppers (cut into strips)
2 tbsp fresh dill (snipped)
  • In medium bowl, mix together beans, celery, salad dressing, and onion.
  • Gently stir in tuna.
  • Line four plates with lettuce leaves.
  • Arrange pepper strips atop lettuce.
  • Spoon tuna mixture on top of pepper strips.
  • Sprinkle each tuna plate with fresh dill.
  • Serve while cold.
