Bean sprouts create a great base for a Chinese dish.
To turn this dish into a main meal, just add leftover cooked chicken, beef, pork, or turkey.

You can also toss in almost any Chinese vegetable for extra taste and texture. Try water chestnuts, bamboo shoots, or celery!

Low fat and delicious
Bean Sprout Salad
Ingredients
6 servings - 31 calories per serving
.9 grams of fat per serving
4 cups fresh bean sprouts
4 cups boiling water
2 tbsp soy sauce
1 tsp sesame oil
2 tbsp scallions, chopped
  • When water is at a full boil, add bean sprouts.
  • Boil for 1 minute.
  • Drain and rinse immediately in cold water.
  • In large mixing bowl or salad bowl, combine bean sprouts, soy sauce, and sesame oil.
  • Toss lightly.
  • Sprinkle scallions atop salad.
  • Chill until serving.
