This recipe easily becomes three when you replace almonds with either macadamia nuts or crushed cashews!

| Chinese Almond Cookies |
Ingredients
12 servings (3 cookies each) - 150 calories per serving
9 grams of fat per serving
|
| 1/2 cup |
butter |
| 1/3 cup |
granulated sugar |
| 1/3 cup |
honey |
| 1-1/2 cups |
all-purpose flour |
| 1/2 tsp |
baking soda |
| 1 tbsp |
cinnamon |
| 1/2 cup |
sliced almonds |
|
- Preheat oven to 350 degrees.
- Spray cookie sheets with non-stick cooking spray.
- In large mixing bowl, beat butter until light and creamy.
- Add sugar.
- Beat until fluffy.
- Add honey.
- Beat until well-blended.
- In separate mixing bowl, combine flour, baking soda, and cinnamon.
- Blend well.
- Add to butter mixture.
- Mix until smooth.
- Shape dough into a log 2 inches in diameter.
- Wrap in wax paper or plastic wrap.
- Place in freezer for 30 minutes.
- Remove plastic wrap or wax paper.
- Slice into 1/4" rounds.
- Place 1 inch apart on cookie sheets.
- Press sliced almonds into tops of cookies.
- Place on center rack of oven.
- Bake for 13-15 minutes or until lightly browned.
- Remove to rack to cool.
- Store tightly covered.
