Perk up the eye appeal of this recipe by combining green, yellow, and red bell peppers instead of just using red.

If you don't like peas, skip them. You can replace them with corn, but adjust for the calorie different.

Try using red onion in place of regular yellow onion for a brighter appearance and a sharper onion flavor.

Confetti Rice
Ingredients
6 servings - 120 calories per serving
2 grams of fat per serving
2 cups water
1 tbsp butter
1 cube chicken flavoured bouillon
3/4 cup long grain rice
1/2 cup carrot (coarsely grated)
1/2 cup celery (sliced)
1 tbsp onion (finely chopped)
1/2 cup frozen peas (thawed)
1/4 cup red bell pepper (coarsely chopped)
  • In medium saucepan, heat water, butter, and bouillon cube to boiling.
  • Add rice, carrot, celery, and onion.
  • Mix well.
  • Bring to a boil.
  • Cover and simmer 20 minutes.
  • Add peas.
  • Cook for 5 minutes.
  • Remove from heat.
  • Stir in bell pepper.
  • Serve while hot.
