Green onions are mild flavored.
When grating orange, lemon, or lime peel, be careful not to get into the white pith below the peel. The pith is bitter.

Minced garlic can be purchased in jars in the produce aisles of most grocery stores.

If you're watching sodium, use low-sodium soy sauce.

Low fat and delicious
Ginger Orange Chicken
Ingredients
4 servings - 30g protein - 1g carbohydrate per serving
200 calories per serving

5g fat per serving
4 bone-in chicken breast halves
1/3 cup soy sauce
3 tbsp sesame oil
1 clove garlic (minced)
1 tbsp orange rind (grated)
1 tbsp ginger root (minced)
1 tbsp green onion (white part only, minced)
3 tbsp orange juice
1/2 tsp pepper
  • Preheat oven to broil (550 degrees).
  • Rinse chicken breasts and pat dry with paper towel.
  • Place chicken breasts in casserole or other glass dish.
  • In a small bowl, combine soy sauce, oil, garlic, orange rind, ginger root, green onion, orange juice, and pepper.
  • Pour over chicken breasts.
  • Place in refrigerator for 1 hour.
  • After 1 hour, remove chicken breasts from marinade.
  • Place breasts on broiler pan, bone side up.
  • Place in broiler 6 inches from heat source.
  • Broil for 10 minutes.
  • Turn chicken over and baste.
  • Return to broiler for 10 minutes.
  • Serve hot.
